Vindaloo Curry with Pork and Mixed Vegetables

Ingredients
- 2 small onions diced
- 1/2 lb pork cubed and cooked in a cup of water until tender (keep the stock after)
- 1/4 cup potato  diced into ½ inch cubes
- 1/4 cup peas
- 1/4 cup carrots diced into small cubes
- 1 tbsp Vindaloo Curry Paste
- 1 cup diced tomatoes canned or fresh
Instructions
- In a small pot, add a tablespoon of oil and let it warm
- Add onions, and turn the burner on low once slightly golden
- Add the potatoes, cook for 3 to 4 minutes on low to medium heat
- Add the Vindaloo curry paste and mix well on low heat
- Add pork, turn heat to medium and cook for 2-3 minutes
- Add carrots and peas and cook for 2-3 minutes
- Lower the heat and then add tomatoes, cover and let simmer forabout 15 minutes
- Add a dash of salt and pepper for taste. Serve on a bed of rice, with flat bread or both. Enjoy!Â
