Green Masala Curry with Tofu and Spinach

Ingredients
- 2 small onions diced
- 1/2 pound firm tofu seasoned with lemon juice, pepper and salt, coated with a little flour and sautéed
- 1/2 cup potato diced
- 1/2 cup spinach chopped
- 1 tbsp Green Masala Curry PasteÂ
- 3/4 cup coconut milk
Instructions
- In a small pot, add a tablespoon of oil and let it warm
- Add onions, and turn the burner on low once slightly golden
- Add the potatoes, cook for 3-4 minutes with low to medium heat
- Add the Green Masala curry paste and mix well on low heat
- Add the tofu, turn heat to medium and cook for 4-5 minutes
- Add the spinach, and wait until wilted
- Lower the heat and then add the coconut milk (add the lamb stock just before) and let simmer for 5 minutes
- Add a dash of salt and pepper for taste. Serve on a bed of rice, with flat bread or both. Enjoy!Â
