Green Masala Curry with Tofu and Spinach

Ingredients
  

  • 2 small onions diced
  • 1/2 pound firm tofu seasoned with lemon juice, pepper and salt, coated with a little flour and sautéed
  • 1/2 cup potato diced
  • 1/2 cup spinach chopped
  • 1 tbsp Green Masala Curry Paste 
  • 3/4 cup coconut milk

Instructions
 

  • In a small pot, add a tablespoon of oil and let it warm
  • Add onions, and turn the burner on low once slightly golden
  • Add the potatoes, cook for 3-4 minutes with low to medium heat
  • Add the Green Masala curry paste and mix well on low heat
  • Add the tofu, turn heat to medium and cook for 4-5 minutes
  • Add the spinach, and wait until wilted
  • Lower the heat and then add the coconut milk (add the lamb stock just before) and let simmer for 5 minutes
  • Add a dash of salt and pepper for taste. Serve on a bed of rice, with flat bread or both. Enjoy!
